Tofu Stuffed Mushrooms
Instructions:
1. Preheat Oven:
Set your oven to 180°C (350°F).
2. Prepare Mushrooms:
Remove stems from the mushrooms and place the caps on a baking sheet, top side down. Finely chop the stems and set aside.
3. Sauté Ingredients:
Heat ghee and olive oil in a pan over medium heat. Add dried red chili and sauté for a minute until it blackens.
4. Cook Filling:
Add onions and garlic, sautéing for another minute. Then, add chopped mushroom stems and grated tofu, cooking for two minutes. Cover the pan and let it cook for another 5 minutes.
5. Cool & Stuff:
Remove the pan from heat and let the mixture cool for 2 minutes. Discard the chili and stuff the mushroom caps evenly with the mixture.
6. Bake & Serve:
Drizzle olive oil over the stuffed mushrooms and bake for 10 minutes. Serve hot.
