Lauki Muthia
Instructions:
1. Prepare the Dough:
- In a mixing bowl, combine whole wheat flour, besan, semolina, turmeric powder, asafoetida, baking soda, cumin seeds, salt, and sugar.
- Add ginger paste, green chilies, coriander leaves, lemon juice, and 1 tbsp peanut oil.
- Squeeze excess water from the grated lauki and onion, then add them to the mixture.
- Knead into a soft dough, adding water if necessary.
2. Steam the Muthia:
- Prepare a steamer by bringing an inch of water to a boil.
- Grease the steamer tray with peanut oil.
- Apply oil to your palms and divide the dough into two portions.
- Shape each into a cylindrical roll.
- Steam for 20 minutes, then allow to cool for 5 minutes.
- Transfer to a plate and slice into half-inch pieces.
3. Temper and Serve:
- Heat 1 tbsp peanut oil in a pan on medium heat.
- Add mustard seeds and let them splutter.
- Add the sliced muthia and sauté gently until golden brown and slightly crispy.
- Serve hot.
