Kathal Kabab
Instructions:
1. Prepare the Mixture
- In a mixing bowl, combine mashed jackfruit, Bengal gram flour, chopped onions, garam masala, ginger-garlic paste, coriander leaves, and salt.
- Knead well to form a stiff dough.
2. Shape the Kababs
- Divide the mixture into four equal portions.
- Roll each portion into a ball and gently flatten it with your palm to shape small patties.
3. Fry the Kababs
- Heat mustard oil in a pan over medium flame.
- Shallow fry the kababs until golden brown on both sides.
4. Serve
- Serve hot with mint chutney or yogurt dip.

Notes/ Precautions
Boil jackfruit properly until soft, then mash it for a smooth kabab texture.
Use mustard oil for authentic flavor and heat it well before frying.
Gram flour helps bind the kababs , but do not add too much to avoid a dry texture.
Flip gently while frying to prevent breaking.
