Saffron Rice

Instructions:

1. Prepare the Saffron Infusion

  • Place a pinch of saffron threads in a spice mortar and grind them into a fine powder using a pestle.
  • Add another small pinch of saffron threads without crushing them.
  • Pour ¼ cup of hot water into the mortar and let it soak for 5 minutes to release the saffron’s flavor.

2. Sauté the Aromatics

  • Heat extra virgin olive oil in a large heavy pot over medium heat.
  • Add the minced onion and sauté for about 10 minutes, stirring frequently until soft and translucent.

3. Cook the Rice

  • Add the soaked and rinsed rice to the pot and sauté for an additional minute.
  • Pour the saffron-infused water evenly over the rice.
  • Add the vegetable stock and salt, then stir.
  • Bring the mixture to a boil.

4. Simmer and Steam

  • Reduce the heat to low, cover the pot, and let the rice cook for 20 minutes.
  • Turn off the heat but keep the pot covered, allowing the rice to steam for another 10 minutes.

5. Serve and Enjoy
