Saffron Rice
Instructions:
1. Prepare the Saffron Infusion
- Place a pinch of saffron threads in a spice mortar and grind them into a fine powder using a pestle.
- Add another small pinch of saffron threads without crushing them.
- Pour ¼ cup of hot water into the mortar and let it soak for 5 minutes to release the saffron’s flavor.
2. Sauté the Aromatics
- Heat extra virgin olive oil in a large heavy pot over medium heat.
- Add the minced onion and sauté for about 10 minutes, stirring frequently until soft and translucent.
3. Cook the Rice
- Add the soaked and rinsed rice to the pot and sauté for an additional minute.
- Pour the saffron-infused water evenly over the rice.
- Add the vegetable stock and salt, then stir.
- Bring the mixture to a boil.
4. Simmer and Steam
- Reduce the heat to low, cover the pot, and let the rice cook for 20 minutes.
- Turn off the heat but keep the pot covered, allowing the rice to steam for another 10 minutes.
5. Serve and Enjoy
