Instructions:

1. Prepare the Base:

Heat soy milk in a pan without boiling it.

Stir in cooked rice and mix well.

Add soy yogurt and salt, then combine thoroughly.

2. Prepare the Tempering:

Heat coconut oil in a small pan.

Add mustard seeds and let them splutter.

Add urad dal and sauté until light golden.

Stir in asafoetida, red chili, and curry leaves; sauté for 30 seconds.

Add grated ginger and sauté for another 30 seconds.

3. Combine & Serve:

Pour the tempering over the curd rice and mix well.

Serve warm and enjoy!
