Vegan Shahi Tofu
Instructions:
1. Sauté the Aromatics:
Heat ghee in a pan over medium heat.
Add ginger-garlic paste and sauté for a minute.
2. Prepare the Base:
Add onion purée and cook until translucent.
Stir in tomato purée and cook until thickened.
3. Spice it Up:
Mix in cumin powder, coriander powder, red chili powder, salt, turmeric, garam masala, and kasuri methi.
4. Make it Creamy:
Stir in cashew cream and bring to a simmer.
Add coconut milk and water, adjusting the consistency.
5. Add Tofu & Simmer:
Gently fold in tofu cubes and let simmer for a few minutes.
Adjust seasoning to taste.
6. Garnish & Serve:
Top with fresh coriander leaves.
Serve hot with rice or naan.
