Radish Kosambari
Instructions:
1. Prepare the Tempering
- Heat coconut oil in a small pan over medium flame.
- Add mustard seeds and let them splutter.
- Add urad dal and fry until golden brown.
- Add green chillies & curry leaves, stir for a few seconds, then turn off the heat.
2. Assemble the Kosambari
- In a mixing bowl, combine grated radish, pink salt, and lemon juice.
- Add the tempering and mix well.
- Garnish with grated coconut & chopped coriander leaves.
3. Serve
- Serve fresh as a side dish with South Indian meals or enjoy it as a light, healthy salad.
