Quinoa Khichdi
Instructions:
1. Prepare the Ingredients
- Rinse the yellow moong dal thoroughly and set aside.
- Wash the quinoa in another bowl and keep it aside.
2. Cook the Khichdi
- In a pressure cooker, add quinoa, moong dal, salt, turmeric powder, red chili powder, and water. Mix well.
- Pressure cook the mixture for 2 whistles.
- Turn off the heat and allow the cooker to cool naturally before opening.
3. Prepare the Tempering
- In a separate pan, heat 1 tbsp of ghee and add cumin seeds.
- Once the cumin seeds crackle, add chopped onions and sauté until golden brown.
- Add chopped green chilies, ginger-garlic paste, and sauté until fragrant.
- Stir in the chopped carrots and cook covered for 5 minutes until tender. If needed, add 1 tbsp of water.
- Add coriander powder and mix well.
4. Combine and Serve
- Add the cooked quinoa khichdi to the pan and mix all the ingredients thoroughly.
- Adjust the consistency by adding water if needed.
- Cover and cook for another 5 minutes.
- Serve hot with an extra teaspoon of ghee drizzled on top.
