Instructions:

1. Prepare the Ingredients
  • Rinse the yellow moong dal thoroughly and set aside.
  • Wash the quinoa in another bowl and keep it aside.
2. Cook the Khichdi
  • In a pressure cooker, add quinoa, moong dal, salt, turmeric powder, red chili powder, and water. Mix well.
  • Pressure cook the mixture for 2 whistles.
  • Turn off the heat and allow the cooker to cool naturally before opening.
3. Prepare the Tempering
  • In a separate pan, heat 1 tbsp of ghee and add cumin seeds.
  • Once the cumin seeds crackle, add chopped onions and sauté until golden brown.
  • Add chopped green chilies, ginger-garlic paste, and sauté until fragrant.
  • Stir in the chopped carrots and cook covered for 5 minutes until tender. If needed, add 1 tbsp of water.
  • Add coriander powder and mix well.
4. Combine and Serve
  • Add the cooked quinoa khichdi to the pan and mix all the ingredients thoroughly.
  • Adjust the consistency by adding water if needed.
  • Cover and cook for another 5 minutes.
  • Serve hot with an extra teaspoon of ghee drizzled on top.
