Mushroom Do Pyaaza
Instructions:
1. Sauté the Aromatics
- Heat oil in a pan and add cumin seeds. Let them splutter.
- Add asafoetida, bay leaf, and ginger-garlic paste. Stir well.
2. Cook the Onions and Tomatoes
- Add chopped onions and cook until translucent.
- Stir in diced onions for added texture.
- Add tomato purée and cook until the raw smell disappears.
3. Cook the Mushrooms
- Add mushrooms, water, and all the spices.
- Stir well and let it cook on low-medium flame until the water dries up.
4. Rest and Serve
- Turn off the heat, cover the pan, and let it sit for 5 minutes.
- Mix well, garnish with coriander leaves, and serve hot.
