Instructions:
Heat Coconut Oil:
In a pan over medium heat, add coconut oil.
Tempering:
Add ginger, green chilli, and curry leaves. Stir for a few seconds until aromatic.
Sauté Onions:
Add onions and stir until they turn translucent.
Add Vegetables & Cook:
Add carrots, potatoes, beans, peas, salt, and water. Cover the pan and let it cook until the vegetables are tender.
Incorporate Coconut Milk:
Turn off the heat and stir in the coconut milk. Mix well, cover the pan, and let it rest for 5 minutes.
Serve Hot:
Enjoy with appam, neer dosa, or steamed rice!
