Aamras ki Kadhi
Instructions:
1. Prepare the Kadhi Base
In a mixing jar or bowl, whisk together aamras, curd, besan, turmeric powder, and water to form a smooth, lump-free mixture.
2. Temper the Spices
In a deep pan, heat ghee on medium flame. Add mustard seeds, cumin seeds, and a pinch of asafoetida. Once they crackle, add dry red chillies, curry leaves, and chopped ginger. Sauté for a minute.
3. Cook the Kadhi
Pour the aamras mixture into the pan. Stir continuously to avoid curdling. Add salt and keep whisking as it comes to a gentle boil. Allow the kadhi to simmer and thicken slightly.
4. Serve
Serve hot with steamed rice or jeera rice for a sweet, tangy twist on traditional kadhi.
