Lauki Cashew Kheer
Instructions:
1. Cook the Bottle Gourd
- Grate the bottle gourd (lauki) and squeeze out excess water.
- In a deep pan, heat milk on a slow flame and add the grated lauki.
- Stir occasionally and let it cook until the milk thickens and turns creamy.
2. Add Sweetness & Flavor
- Once the milk has reduced, switch off the gas and add jaggery.
- Stir continuously to mix the jaggery well (do this after switching off the gas to prevent milk from curdling).
- Add cardamom powder and crushed cashews for extra richness.
3. Serve & Enjoy!
- Serve hot for a comforting dessert or chilled for a refreshing sweet treat.

Notes/ Precautions
Use fresh lauki to avoid bitterness. Always add jaggery after turning off the flame to prevent curdling. Cashews add richness , but you can also add almonds or raisins . For a vegan version , replace milk with coconut milk .
