Kesar Kulfi
Instructions:
1. Reduce the Milk
- In a heavy-bottomed pan, bring the milk to a boil.
- Lower the flame and simmer until the milk reduces to 70% of its original volume, stirring occasionally to prevent burning.
2. Add Flavor & Nuts
- Add honey, elaichi powder, saffron strands, chopped almonds, and cashews.
- Mix well and continue to simmer for 2-3 minutes until everything blends smoothly.
3. Cool & Freeze
- Allow the mixture to cool completely.
- Pour into kulfi molds or popsicle molds.
- Freeze for 4-6 hours or until fully set.
4. Serve
- Demold by running the molds under warm water for a few seconds.

Notes/ Precautions
Stir continuously while reducing the milk to avoid burning.
Do not add honey while boiling ; mix it after cooling slightly to preserve its nutrients.
For a richer texture , you can add a little fresh cream or khoya .
Use silicone molds for easy demolding .
