Kanchipuram Idli
Instructions:
Prepare the Batter: Grind all the ingredients (except ghee) into a coarse idli batter. Let it ferment for at least 6 hours.
Set Up the Steamer: Pour water into an idli vessel and bring it to a boil.
Prepare Idli Moulds: Place the idli plate inside the vessel without the cloth.
Grease the Cups: Take small steel cups, add 1 tsp ghee in each.
Pour the Batter: Fill the cups with the fermented batter.
Steam the Idlis: Place the cups in the idli steamer and steam for 20 minutes.
Serve Hot: Demould and enjoy with coconut chutney and hot sambar!
